Homemade Chicken Nuggets

Yesterday was Mother's Day and all the kids kept asking what I wanted for dinner. I had seen an advertisement on social media for fried chicken at a local restaurant and just couldn't stop thinking about it.

We recently bought our first house so we are on a tight budget for a little while- so I figured why not make my famous homemade chicken nuggets!!





Ummm, I am getting hungry again just looking at these babies!

When I mentioned we were going to have this for supper my kids got real excited. Its by far their favorite thing to have!

Even though it was Mother's Day I decided the best motherly thing to do would be teach my daughter (and our adopted neighbhood daughter...lol) some basic life skills and show them how to cook.


They enjoyed themselves but became quiet girly when it came to touching raw chicken or getting their hands dirty with the flour sticking to their fingers...lol


Gather your Ingredients:

5-7 boneless skinless chicken breasts
2 cups flour
1 T. salt
1 t. pepper
1 t. cayenne pepper (these are not spicy at all with this in it)
1 t. paprika
1 T. garlic powder
1 T. onion powder
1 T. Tony's Creole Cajun Seasoning
1 t. season salt
1 t. seasoned meat tenderizer

3 cups milk
3 eggs

Oil for frying (I prefer peanut oil) heat to 350 degrees in dutch oven (my favorite is this Cuisinart Cast Iron Dutch Oven). 


How to Make The Magic Happen:

1. Trim off any fat and cube your chicken into bite size chunks.




2. Mix all dry ingredients into a large bowl.
3. Place milk and eggs into another large bowl.
4. Dredge chicken in egg wash.




5. Flour chicken.
6. Re-dredge in egg wash.




7. Flour chicken again.
8. Fry for 5-7 minutes or until golden brown.



This was so simple!


These did not last long at all!!
Be sure to make extra fixins like mashed potatoes, veggies, dinner rolls to make a complete meal.

      Oh not weird at all....I eat them for breakfast (if there are leftovers...but that's not typical here at this house!!)

  4. I should make these and keep frozen. I use popcorn chicken in my salads (frozen section). These would be soooo much better!!
