Loaded Veggie Lasagna

To stick with the Daniel Fast theme, I wanted to make something with all the veggies I had laying on my counter tops. I know this is technically not Daniel Fast friendly because of the cheese, but that can be substituted with tofu.

I have to share with you how this Daniel Fast is working out for me. I have been doing this for over a week now, and I feel amazing. A traditional fast { no food, just water} really packs a spiritual punch, but an extended fast like this can pack just as hard a punch or harder if you really apply lots of devotion with it. 

I am not sharing any of this to boast about my walk with God, what I am eating or how "spiritual" I am. I am sharing to bring inspiration, hope and shine a light onto Who Jesus Christ is. 

Some things I have learned in one week of this challenging, yet rewarding fast, is that my 5 senses have really opened up because I am feeding my body the proper foods my body needs to function at it's best.  Not only has my body "re-awakened" but my spirit has also been awakened.

When our bodies are full of junk, everything gets sluggish, not just our physical bodies. How can we really be in tune with what God is telling us if our bodies are so out of whack. If my blood sugar gets too low, I am shaky, agitated and lightheaded- there is no way I can focus on prayer or reading my Bible like this. 

This same principle applies to many areas of our eating habits. Too much sugar, not being able to eliminate toxins everyday, headaches caused by not enough water. I have shared many times that I suffer from acne- all this time I knew what caused it, but I did not have the tools or the will power to remove sugar from my diet. I needed just a little nudge from our Pastor to really try it out. 
"What? know ye not that your body is the temple of the Holy Ghost which is in you, which ye have of God, and ye are not your own?"- 1 Corinthians 6:19
I am more aware of this passage of scripture like never before!! I truly know what it means now! I hope that you also know what this means and truly make this a lifestyle of treating your bodies like the marvelous temple God created it to be!!

Now onto the recipe:

Ingredients:

2 medium carrots, julienned 
  1 medium zucchini, julienned
  1 yellow summer squash, julienned
  1 medium onion, sliced
  1 cup fresh broccoli florets
  1/2 cup sliced celery
  1/2 cup julienned sweet red pepper
  1/2 cup julienned green pepper
  1/2 to 1 teaspoon sea salt
  2 tablespoons olive oil
  2 garlic cloves, minced
  3-1/2 cups spaghetti sauce
  14 lasagna noodles, cooked and drained
  4 cups (16 ounces) shredded part-skim mozzarella cheese

Instructions:

-In a large skillet, stir-fry vegetables and salt in oil until crisp-tender. Add garlic; cook 1 minute longer.
-Spread 3/4 cup spaghetti sauce in the greased 13-in. x 9-in. baking dish. Arrange seven noodles over sauce, overlapping as needed. Layer with half of the vegetables, spaghetti sauce and cheese. Repeat layers.
-Cover and bake at 350° for 60-65 minutes or until bubbly. Let stand for 15 minutes before cutting. Yield: 12 servings.

How did it work out?

 It was very, very delish!! 

My hubby loves lasagna!! He was very skeptical and gave me the stink eye when I showed him what we were having for supper, but let me tell you....he loved it! He asked me, how come you cannot make regular lasagna taste like this. I will not go into the conversation we had about taste involves the ingredients you use and all that jazz...let's just say, it made me feel good that he enjoyed it!!
