Split Pea Soup Without Ham
But be warned, this is not a vegan soup because I did use bacon grease! And let me tell you, that made all the difference!!

Ok so here is the recipe, I know you will not be disappointed!!
1 T. vegetable oil {I used bacon grease!!}
1 onion, chopped
1 bay leaf
3 cloves garlic, minced
2 cups dried split peas
1 1/2 t. salt
7 1/2 cups water
3 carrots, sliced {I used a bag of frozen, sliced}
3 stalks celery {oops, I didn't use that, I didn't have any!}
3 potatoes, diced
1 t. dried parsley
1/2 t. dried basil
1/2 t. ground thyme
1/2 t. pepper
Saute your onions, garlic and bay leaf in your oil choice until onions are transparent.
{I used a cast iron soup pot}
Then add 7 1/2 cups water to pot, 2 cups dried peas and salt. Bring to rolling boil. Reduce heat and simmer 2 hours, stir occasionally.
After 2 hours add your diced potatoes, carrots and celery and your spices.
Simmer 1 hour, stir frequently.
I had to add 2 cups more water as mine got so thick I didn't think the vegetables would cook. You can leave it alone or add as much water as you like.
This recipe is good with crackers or with any bake and serve rolls!
