Yellow Cake Mix

From Scratch

I hate to say it, but all married couples know that at some point we all end up in the dog house. Well, my turn came the other night :-(

I know my hubby is a sucker for cake, yellow cake with chocolate icing to be exact. I knew if I made him that cake I could easily slip back into his good graces. The old saying, "A way to a mans heart is through his stomach" holds true when I make him cake!!!

I searched frantically in the kitchen for a box of cake mix only to have my heart drop, I was out. OH MAN!! I was not about to run into town for a box of cake mix, guess I will just suck it up and stay out with the dogs...hehehe {we don't have any pets, so this saying is just funny to me}. 

I got on the internet and searched for over an hour for a recipe that sounded right. I have made a scratch cake not to long ago and it was awful! My hubby said, "stick to the box" so I was super hesitant to even venture into the scratch world again. But my love for him and wanting to smooth things over {of course we did talk and get things right, but I wanted to "seal" the deal with a sweet treat, don't judge, you have done it too}, I wanted to make that cake!

There was recipe after sweet recipe, nothing appealed to me. All the pictures of the cake looked heavy, dry and not yummy. UNTIL, I stumbled on this recipe. I would share the original, but I can't remember were I got it, and I modified it to make it my own! I am notorious for never sticking exactly to a recipe....;-)
The orginal was a make ahead and store recipe with dry milk, and called for margarine and less of it.
I had to fix it now, and I did not have dry milk. She said to use water instead...uh, no thank you!!

Needless to say, this risk paid off great! Everyone loved it. In fact, I will be so bold as to say it was better than a box cake mix!! I saved my modified version in my special recipe book for later use. I honestly do not think I will ever use box cake mix again. Not only did this taste better, but all the preservatives and artificial junk  in box mixes are terrible for you!

That's how you know its yummy!!

Here is my beloved recipe:

Yellow Cake Mix

2 cups all purpose flour
1 1/2 cups sugar
1 tablespoon baking powder
3/4 cups milk {I used vanilla almond milk}
1 teaspoon pure vanilla extract
1 cup real butter, soft
3 eggs
1/2 pkg vanilla pudding mix

Preheat oven to 350 degrees.

In med bowl add dry ingredients and stir together with a fork. In another medium bowl cream sugar and butter. Add eggs, vanilla and milk; mix well. The add dry ingredients a little at a time and fold into wet ingredients. After all folded in, use mixer to get lumps out. Bake for 30-40 minutes in 13 X 9 greased and floured pan.

The batter will appear thicker than a box mix, this is OK. My cake turned out so moist and very delicious.
{I should know, I ate 2 big pieces once it was done!!!}

    I have been using "real" fats for many years, avoiding hydrogenated oils. Your from scratch "boxed" yellow cake mix is sooo good!! Again, thank you! I made several dry mixes and placed them in jars for easier quicker cakes later. Yumm! Marie
